Cream cheese icing is the perfect compliment to cake. Whether it's delicious carrot cake, spice cake, lemon...it's the icing that people always enjoy. Not too sweet with just the right amount of tang for balance.
Semi-Sweet Cream Cheese Icing
1/2 cup butter - room temp
2 bricks of cream cheese - room temp
2 cups sifted icing sugar
dash of allspice
Make sure the ingredients are room temp. Put the butter and cream cheese in a mixer with a paddle. Cream together until nice and smooth. *
Sift icing sugar. **
Add the sifted icing sugar and allspice to butter/cream cheese mix and whip till it is the consistency you enjoy. ***
* Use room temp ingredients. If the cream cheese is too cold it makes the icing lumpy. The butter incorporates easier if it is cool to the touch and indents when you touch it.
** Sifting icing sugar is very important. If the sugar is not sifted, it will leave little hard flecks in your final product and no whipping will fix that. If you were to make a chocolate version or colour your frosting it would show even more.
*** Don't over whip. The icing should be smooth enough to spread but have a strong enough structure to pipe.
