Chocolate Peanut Butter Mousse Pie

This one is a keeper! Peanut butter whipped up with cream cheese, whipped cream and icing sugar - poured into a cookie crust and topped with any and all drizzles, candies, and cookies! Yup...you're going to like this one.


It's a no-bake pie that starts with a cookie crust you can make yourself by grinding Oreos - including the icing -or using Oreos crumbs, or any other traditional graham or cookie crust will work here. Homemade or pre-made from the store...super easy.



The hardest part is waiting for the creamy pie to gel in the fridge so it can slice nice and firm. The addition of icing sugar to the whipped cream filling helps stabilize the filling, as does making sure the pie has a few hours...or better yet...over night to firm up in the fridge.


One of my taste-testers told me it was the best dessert I've ever made! Lol...considering how many goodies I constantly make my friends eat...that is saying a lot!




Give this recipe a try and let me know how you like it! And if you want to make a larger pie...just times it by 1.5 and make a nice big 9.5 inch instead.


Chocolate Peanut Butter Mousse Pie


Ingredients

Base

  • 25 Oreos crushed or 1 1/3 cups Oreo crumbs

  • 1/3 cup melted butter

  • or simply use a pre-made cookie/graham pie shell

Filling

  • 1 cup peanut butter

  • 8 oz brick cream cheese softened

  • 3/4 cup sifted icing sugar

  • 1 cup whipping cream

  • 1 tsp vanilla

For decorating

  • optional...drizzle melted chocolate chips, peanut butter chips, peanuts, Reese pieces, chocolate chips etc for decorating

  • optional...3/4 cup whipping cream with 1/4 cup icing sugar, and 1/2 tsp vanilla whipped together to decorate top as well


Directions

  1. Grind cookies...filling and all or use crumbs only. Add melted butter and stir.

  2. Press into pie pan and place in fridge or freezer.

  3. Cream peanut butter, cream cheese, and vanilla together. Remove to another bowl.

  4. Whip whipping cream with icing sugar.

  5. Fold whipped cream mixture with peanut butter mixture.

  6. Pour into prepared pie shell. Smooth with offset spatula and refrigerate.

  7. After a couple of hours of letting the pie set up in the fridge, decorate as you like.

  8. Melt chocolate chips/Nutella/peanut butter chips/caramel...whatever toppings you enjoy. Drizzle over the top of the pie. Decorate with nuts and/or candies.

  9. Whip whipping cream together with icing sugar and vanilla and decorate the top with rosettes. I used a 1M tip.

  10. I added peanut butter cups to the top of my pie.

  11. Refrigerate preferably overnight. Enjoy!
