Caramel Toffee Squares


Now these are a treat! When you have a Twix craving, but decidedly require a pan-full...these are the ticket! They cut nicely into small squares, so you can feed a crowd from a 9 x 9.


The bottom layer needs a bit of colour when baking it , so times are approximate. It's flavourful and sandy, yet holds together with just a bit of crumbling...as a cookie should be.


This is NOT a diet item. Caramel is sugar. Yummy, creamy, buttery sugary goodness. Easy to make. Takes a few minutes of stirring on the stovetop and you're good to go.


And the chocolate layer...use whatever you have on hand. I happened to have a large Lindt Swiss chocolate bar in my pantry, so I melted that and poured it on top.



The whole thing sets up in the fridge. I took mine out and let it come to room temp before cutting it. It made it easy to slice through that way. You can store it in the fridge if your home is warm or in a container on the counter otherwise. Mine was devoured in a few minutes, so truly - I don't think storage will be an issue!

Caramel Toffee Squares


Ingredients

Bottom Layer

  • 1 1/4 cups flour

  • 1/4 cup sugar

  • 1/2 cup plus 2 tsp butter room temp

Middle Layer

  • 1/2 cup butter

  • 1/2 cup packed brown sugar

  • 2 tbsp corn syrup

  • 1/2 cup sweetened condensed milk

Top Layer

  • 2 cups semi-sweet chocolate chips


Directions

  1. Preheat oven to 350°F.

  2. Bottom layer - mix all ingredients well. Press into foil lined 9x9 pan. Overhang the foil for easy removal. Bake for 20 minutes. Watch for colour. Take out and set aside.

  3. Middle layer - combine all four ingredients in saucepan. Bring to boil over medium heat. Boil 5 minutes, stirring constantly, as it burns easily. Remove from heat and continue to stir until thickened.

  4. Pour over bottom layer.

  5. Top layer - melt chocolate chips...microwave or stovetop over water. Stir often til smooth. Spread over middle layer. Chill.

  6. Enjoy!
